Including CC with video

I am recording tutorials, and I would like to see the closed captioning that I do turn on.  I have followed the instructions from Preferences and Category.  However, the only option under Category is Media Types.  I therefore cannot select accessibility or text captioning the directions specify.  Is there a way I can include the closed captions in my recordings?
